Begin by washing the fresh blueberries thoroughly under cold water. In a high-speed blender, combine the washed blueberries, freshly squeezed lemon juice, honey or maple syrup, coconut water, and lemon zest. Blend together on high speed until the mixture is smooth and the blueberries are fully puréed, about 30-60 seconds.
After blending, taste the mixture to determine if it meets your desired level of sweetness. If you prefer a sweeter popsicle, gradually add more honey or maple syrup, blending briefly after each addition to incorporate.
Carefully pour the vibrant blueberry lemon mixture into your popsicle molds. Make sure to leave a small amount of space at the top of each mold to accommodate the expansion that occurs as the popsicles freeze.
Once filled, gently insert popsicle sticks into the center of each mold, ensuring they are upright. Place the filled molds upright in the freezer.
Allow the popsicles to freeze for a minimum of 4-6 hours, or until they are fully solid and hold their shape when tapped.
When you're ready to enjoy your popsicles, remove them from the freezer. To easily release the popsicles, run warm water over the outside of each mold for about 10-15 seconds. This will help loosen them. Then, gently pull the popsicles out of the molds, taking care not to break them.
