Start by patting the sirloin steak pieces dry with a paper towel. This step is crucial for achieving a beautiful sear. Season all sides generously with salt and freshly ground black pepper.
In a large, heavy skillet, heat the olive oil over medium-high heat until it shimmers and is hot enough to sizzle when a piece of steak touches the surface.
Carefully add the seasoned steak bites to the skillet in a single, even layer. Avoid overcrowding the pan to ensure proper searing. Cook without moving them for about 2-3 minutes, allowing a golden crust to form.
Flip the steak bites using tongs and sear the opposite side for another 2 minutes, or until they have a nice golden brown color and are still juicy on the inside. Remove the seared steak bites from the skillet and transfer them to a plate, keeping them warm.
In the same skillet, lower the heat to medium and add the butter. Allow it to melt completely before stirring in the minced garlic, chopped rosemary, and thyme.
