In a medium mixing bowl, combine the rolled oats, chia seeds, and a pinch of salt. Stir thoroughly to ensure the chia seeds are evenly distributed among the oats.
In another bowl, whisk together the almond milk, Greek yogurt, honey (or maple syrup), lemon zest, and lemon juice until the mixture is smooth and well incorporated.
Slowly pour the wet mixture over the dry oat mixture, stirring gently yet thoroughly to coat all the oats with the liquid. Ensure there are no dry bits left.
Gently fold in the fresh blueberries, being careful to save a small handful for topping later.
Evenly distribute the oat mixture into jars or airtight containers. Seal them tightly and place in the refrigerator for at least 4 hours, preferably overnight.
The next morning, stir the oats well to combine. If you find the mixture is too thick for your liking, add a splash of almond milk to achieve your desired consistency.
Just before serving, top your oats with the reserved fresh blueberries and a light sprinkle of lemon zest for an extra burst of flavor.
