Prepare the filling: In a separate large bowl, combine the sliced apples with lemon juice, cinnamon, nutmeg, and brown sugar. Toss everything together until the apple slices are evenly coated in the mixture. Allow the filling to sit for about 10 minutes to let the flavors meld and the juices start to develop.
